Unfortunately, I didn’t have enough time to wait and dine during lunch. One evening, I happened to pass by and saw there were seats available, so I decided to give it a try. The ramen shop offers five types of ramen, and I chose two of them. The Special Beef Bone White Soup Ramen is generously topped with tender and smooth Wagyu beef slices. The two pieces of chashu are aromatic, tender, and flavorful. It also comes with a soft-boiled marinated egg. The milky white beef bone broth is smooth, rich but not greasy, and has a deep, savory flavor. The taste is slightly sweet with the umami of beef bones. The Spicy Beef Bone Chashu Ramen combines the umami of beef bones with a spicy kick 🥵, the aroma of spicy 🌶️ sauce, and the gelatinous texture from long hours of simmering, creating a complex flavor profile. The ramen noodles are thin but firm, with a slight chewiness, and they absorb the broth well. The Chicken Skin Dumplings use chicken skin instead of traditional dumpling wrappers. After being deep-fried, the outer skin is crispy with a rich chicken fat aroma.
