I visited Chungjangok, a famous noodle restaurant in Chungjang-ro, Gwangju:) Chungjangok uses only rice that has been milled for less than 7 days. They cook rice with seasoned broth so that the saltiness doesn't change when it's rolled in broth, and they cook rice with boiling broth, not cold water, so that the starch melts out of the rice grains before it's cooked. And they make kimchi, cubed radish kimchi, and green onion kimchi in-house and don't use shrimp paste, so it's really delicious.
