Mouri's traditional pit-roasting method involves digging a hole in the ground, heating many round stones in the pit, then sealing fresh ingredients such as pork, lamb, potatoes, and sweet potatoes with leaves or tin foil, placing them on the hot stones in the pit, and finally filling the gaps with mud or leaves to ensure heat retention.
