A century-old oden restaurant in Asakusa, Tokyo

When it comes to oden, everyone will think of the fast food in convenience stores (which is also delicious), but recently I wanted to try whether the taste of "real oden" is much different. So while I was in Tokyo, I tried Asakusa Oden Otsufuku, a product of the century-old Tabelog Hyakumei Store. Da Duo Fu serves more than 30 oden items every day, ranging from the most common daikon and fish cake to seasonal seafood. Each one has its own merits. You might think they all taste almost the same when cooked in a copper pot, but the degree of cooking is just right (for example, the octopus legs are not overcooked) and can still bring out the soulful deliciousness of the broth that is clear but not bland. After all, each ingredient has its own personality and is processed in different ways. How to maintain the sweetness of kelp and the salty freshness of bonito in the broth is truly a science.
