PHUC TU FISH SOUP – 118 HAI BA TRUNG, THAI BINH
I just visited Phuc Tuu Fish Soup again, a long-standing fish soup restaurant in Thai Binh, nearly 50 years old.
The restaurant has a very affectionate name: Phuc Tuu, a combination of the names of the owner and his wife. Now, the children and grandchildren still take over and cook, three generations roll up their sleeves to make it, full of family and tradition.
The highlight is the fish soup:
Grass carp or silver carp, each piece is delicious, golden brown, crispy on the outside but still soft and sweet on the inside. But it's not delicious just by frying it, the fish here has to go through 4 elaborate processing steps over 4 hours.
A full bowl of soup: there is fish, a piece of fish cake (this dish is ground from meat + fish bones, except for the fish head), there are meatballs, and there are spinach, water spinach, and mustard greens. The vegetables depend on the season, but they are fresh, green, crispy and sweet.
• The broth is made from fish bones, sweet, fragrant, not fishy at all. I ate it without adding any spices, full flavor.
• White rice paper, chewy, not mushy or hard.

• Regular bowl: 35k
• Special bowl: 50-60k
I have eaten at several other fish soup restaurants in Thai Binh, but I still like Phuc Tuu the most:
→ Not too crowded.
→ Fast service, everyone's face is friendly.
→ The soup is extremely flavorful, the ingredients are fresh and real, there is no smell of MSG or industrial spices.
In particular, when asked for the secret, the owner told me everything, with passion.
Phuc Tuu fish soup, a family restaurant for nearly 50 years, still retains the flavor of the countryside, and still makes me sit and slurp the whole bowl of soup and feel warm in the stomach on a hot summer day.
If anyone has ever doubted that fish soup is fishy or greasy, try this restaurant once. After making sure, I want to shout out loud: “Hey, give me another bowl!” 😁
Oh, don’t forget to order a plate of crispy roast pork, dipped in a little chili fish sauce, very delicious!
