Okinawa | A Space Made of Red Spoons: Enjoy Rich Tonkotsu Broth at Kōchan in Naha

Fukuoka's original tonkotsu ramen chain, Ikkousha, is likely familiar to many. In recent years, they underwent a series of reforms and launched a sub-brand called Kōchan, which focuses on affordability and everyday accessibility. The updated interior design is more youthful and stylish, making tonkotsu ramen appealing not just to men but also to women and families. During a stroll along Kokusai Street, I stumbled upon Kōchan, which transitioned from Ikkousha to its new identity in 2023. This discovery also made up for the regret of missing out on Ikkousha during my trip to Fukuoka a few months ago. The restaurant features an open kitchen with wooden decor complemented by red spoon-themed lighting fixtures, creating a warm and trendy atmosphere. There's even a red dragon made of spoons in the seating area. The ventilation is excellent, so even at the counter seats, you won't be bothered by the typical greasy smell of traditional ramen shops. I ordered the signature ramen with wontons, paired with the classic set of gyoza. The noodles were chewy, and the broth was flavorful. However, the wontons had less filling, making them less prominent. The gyoza were crispy and aromatic, delivering the familiar taste of Ikkousha.
