This is an imaginatively created historic hotel which has really excellent staff. It also has a great atmosphere, a little like certain hotels in Matera which have rooms carved out of rock. The fact that the hotel is not all under the same roof could be inconvenient in bad weather, but the weather is Sicily is usually good. We were there in winter, had no problems and loved our cave room. The Reception staff are all exceptional, very friendly and always available to give advice or make bookings. Breakfast, which is excellent, is served in a room with views across a deep valley by two lovely staff members who make very good coffee and egg dishes. The Michelin starred Locanda Don Serafino restaurant is beyond amazing. Partially carved into multi-coloured rock, it is very beautiful to look at, and the atmosphere is matched by the wonderful food and service. The Executive Chef is brilliant, as well as very helpful with dietary problems. His whole team are both efficient and warm and friendly, an absolutely perfect experience.
