A Culinary Discovery in Fez, Morocco

While wandering through the labyrinthine streets of Fez one evening, we stumbled upon a hidden gem—Restaurant Palais Bab Sahra Fes. Drawn in by its warm and inviting atmosphere, we decided to stop for dinner. It turned out to be one of the most memorable meals of our trip. We enjoyed a flavorful couscous dish paired with incredibly tender meat, a perfect balance of spices and textures that truly captured the essence of Moroccan cuisine. The staff were exceptionally kind and welcoming, and they invited us to the rooftop terrace after our meal. There, we were treated to traditional Moroccan tea and delicious homemade biscuits, all while taking in the calming ambiance of the medina. What made the experience even more unique was their offer to participate in a Moroccan cooking class. Held in a beautifully decorated kitchen inspired by local design, the class gave us hands-on insight into the rich culinary traditions of the region. It was both fun and enriching. We learned that the restaurant is also expanding to include a small boutique hotel, and we’re already looking forward to staying there on our next visit to Fez. We visited the Al Quaraouiyine University, the stunning Bou Inania Madrasa, and the famous Chouara Tanneries, where leather is dyed using ancient techniques. We also had a delicious local meal at Mom's Touch, a cozy spot with great flavors. Fez truly offers a deep and colorful journey into Moroccan heritage.
